Recipe for Payesa salad from Formentera

As we have commented in other articles, Formentera’s gastronomy stands out for having its own peculiarities, which allow us to learn first-hand about the culture of the islanders. And is there a better way to get closer to the customs of another region than through food? We think not.

Among one of the favorite recipes, we find the country salad. This dish is made based on simple foods that we can find in any pantry, such as tomato, potato, pepper or onion, but with hard bread or bread biscuit and dried fish or peix sec typical of Formentera. These two elements provide a very peculiar touch and are the emblem and seal of the island.

This dish is especially typical in summer and has become one of the most acclaimed by all tourists who visit the island of Formentera. The secret lies in its simplicity, since the preparation has no secret beyond the ingredients previously mentioned and which, below, we recommend that you use for four people:

  • 4 tomatoes
  • 1 onion
  • 4 small potatoes
  • 4 small peppers or 1 green pepper and half a red pepper
  • 2 pieces of toasted bread or 400 grams
  • 1 jar of dried fish from Formentera, in olive oil
  • Salt
  • Black pepper
  • Extra virgin olive oil

Of course, for the expected result to be obtained, you must follow the simple steps that we discuss below.

  1. First, boil the potatoes and then remove their skin.
  2. Next, it is time to crumble the bread sliceinto pieces that are not extremely small, so that you can moisten them in a cloth moistened with water.
  3. The next step is to blanch and peel the tomatoes, and then cut them into relatively large pieces.
  4. Next, it is time to clean the peppers and onion, and cut them once again into pieces that are not extremely small.
  5. Once the previous steps are done, we cut the boiled potatoes and serve them in a deep plate, to which we will add the pieces of moistened bread, the tomato, the onion and the dried fish with the oil.
  6. Finally, all you need to do is season with salt and pepper and let it rest for a few minutes. It is important not to wait too much time to serve, otherwise the bread will be excessively soft.

As you can see, preparing this recipe is very simple if you choose to follow all the steps carefully. If you wish, at the moment of serving the salad, you can add more oil to taste. Easy, right? Now you just have to buy all the ingredients and embark on preparing your own dish. You will not regret!
